Baked Parmesan Zucchini Chips

Zucchini is one of my favorite vegetable and there are so many ways you can make great appetizers using zucchini. This dish is an inspiration from Zucchini Fritters at RPM Italian. With some trial and error this dish surprise me, the only thing I suggest is using Panko breadcrumbs instead of the regular it can make some difference.   Ingredients: Zucchini Bread crumbs (use panko if possible) Red Chilli flakes Dried Parsley Olive Oil Parmesan cheese (shredded)     Method: 1.Cut zucchini in thin slices. 2.In a bowl, mix bread crumbs (I have used Italian bread crumbs, I highly recommend panko), add red chili flakes, parsley, shredded parmesan and pinch of salt. 3. Dip the zucchini in olive oil and then in the bread crumbs mixture 4. Place the zucchini pieces on a baking sheet. 5. Heat oven to 350F and bake for about 20-30 minutes. Serve hot with dips. An easy dip is mayo with some paprika.
