Classic Eggless Cake

When I ask for an eggless cake in a bakery, they point me towards a vegan cake. Some might enjoy the vegan cake but for us it's not something we would enjoy a lot.

Baking has always been a little bit of challenge for me, but with lot of research and patience I decided to try this timeless classic cake (without egg).

Ingredients:
All purpose flour - 1.5 cups
Sugar - 1 cup
Oil - 1/4 cup
Sour cream - 1/4 cup
Whole milk - 3/4 cup
Baking soda - 1/2 tsp
Baking powder - 1 tsp
Vanilla - 1 tsp
Chocolate chips (used for baking) - 1/2 cup

Method:
1. In a bowl whisk oil and yoghurt followed by the sugar. Keep whisking till the sugar has completely dissolved.
2. Add whole milk and sour cream to this mixture and mix well.
3. Add the vanilla followed by the all purpose flour, baking powder and baking soda.
4. Whisk this mixture thoroughly ensuring no lumps are formed.
5. Finally add the chocolate chips.
6. Grease a baking pan with butter and dust some all purpose flour and pour the cake batter to the pan ensuring no bubbles are formed.
7. Pre-heat the oven at 350F and place the prepared mixture for about 40-50 minutes.
8. When the cake is ready poke a toothpick (or knife) to make sure it comes out clean.
9. Remove the cake after cooling it for about 10-15 minutes.

Serve as a dessert or with a cup of coffee.




Note: You can substitute the whole milk with evaporated milk.
You can use yoghurt instead of sour cream.
Instead of chocolate chips add any nuts (almonds, raisins) or even few tsp of coffee or cocoa powder depending on the desired flavor.
