Le Pattice or Ragda Pattice


The most loved chaat for all Mumbaiker’s Ragda Pattis…but in my blog I have called it Le Pattice  (named by my brother-in-law) only because the way I served was just like a French dish.
For the chana:
2 cups of Chana
1 onion
2 tomatos
Ginger
Garlic
Bay leaves
Cloves
Cinnamon sticks
Red chilli powder
Turmeric powder
Coriander powder
Lemon juice
Salt
Oil
Water
Soak chana overnight or for about 8-10 hours.
Pressures cook the chana with a pinch of salt.
 In a pan heat oil and add bay leaves, cinnamon sticks and cloves.
Add a paste of onion’s and sauté it well enough till cooked thoroughly (little more than golden brown)
Add the garlic paste followed by ginger and green chillies paste.
Once all blended well add chopped tomatoes and let it cook for a while.
Add salt, coriander powder, turmeric powder, garam masala and some lemon juice.
Once this paste is blended well, add the chana with some water.
With a masher, mash some chana to make a thick consistent curry.
Let the chana get blend with the spices and get cooked thoroughly.

For making the patties:
Potato’s 4-5 (depending on size and quantity)
Bread slices
Garam masala powder
Lemon juice
Green chillis
Ginger
Fresh coriander
Salt
Boil potatoe’s
Mash the boiled potato’s
Take 2 slices of bread and soak them in warm water. Squeeze them and add it to the masher potato’s.
Add salt, garam masala, lemon juice, green chilles and ginger paste and some freshly chopped coriander to the mixture.
Make sure the mixture is mixed evenly.
Make small round ball of the potato mixture.
In a skillet, add few tsp of oil and place the round ball potato patties to get cooked evenly on both sides.
Flip over to the other side.
For serving:
Place potato patties on a plate
Place some ragda over the patties
Add sweet-tangy chutney and green spicy chutney.
Add some freshly chopped onions and coriander.
Mouth watering ragda patties is ready to be served.
(Optionally: you can add sev if needed)
