Mediterranean Sandwich


Ever thought of using eggplant to make a sandwich? This delicious Mediterranean sandwich is healthy (because it has eggplant) and mouth watering (because it has cheese). Now you really don't need an excuse to not eat eggplant.

Ingredients:
Eggplant
Tomato
Mint Chutney
Butter
Bread
Salt
Basil (easier to use basil powder)
Black pepper powder

Method:
1. Cut the eggplant in long slices. Brush olive oil on both the sides. Add basil, black pepper and salt on both sides. Heat the slices in the oven at 350F for about 10-15 minutes until cooked properly.
2. Follow the same procedure for tomatos as well.
3. Take bread slices and apply butter followed by mint chutney.
4. Place the cooked eggplant slices and tomatos on the slice.
5. Add crumbled feta cheese and place the other bread slice on top.
6. Place this sandwich in the grill.
7. After grilling serve the hot sandwich with ketchup and potato chips.
