Palak Chole (Spinach & Chick peas)

Ingredients:
Chick peas
Spinach (palak)
Onions
Tomatoes
Ginger
Garlic
Lemon juice
Garam masala
Green chillies
Red chillies
Cinnamon sticks
Cloves
Bay leaf
Coriander seeds
Cumin seeds
Ghee
Salt

Method:
Soak chick peas overnight and boil them.
Blanch the spinach using some salt.
Puree the blanched spinach once cooled.
In a pan, add ghee followed by bay leaves, cinnamon sticks, cloves, coriander seeds and cumin seeds.
Sauté the finely chopped onions and grated garlic till golden brown.
Add green chilles and finely chopped garlic.
Add the chopped tomatoes followed by the spinach puree.
Once the water from the spinach puree begins to evaporate add the chick peas.
Add garam masala powder, red chillies, lemon juice and salt to taste.
Allow the chick peas to mix well with the spices and spinach puree for few minutes.
Serve hot with parathas or rice
