Spicy Affair Roasted Potato's
Every thought of trying some roasted Potato's with some indian spices.
What do you need?
2 Red skin Potato’s
2-3 cloves of garlic
6-8 roma baby tomato’s (this is optional, I added few since I wanted to use them)
2 tsp Olive Oil
1 tsp Cumin seeds
1 tsp Mustard seeds
Red chilli powder
Coriander powder
Lemon juice
Salt
Corriander
How do I make it?
1. Wash the red skin potatoes and cut them in wedges or in big pieces (depends on your personal preference). Don’t peel the skin!!
2. In a pan boil water and add salt, followed by the cut potato. Boil for about 5 minutes.
3. Drain the potato’s and set them aside.
4. Using a blender or mortar and pestel grind the cumin and mustard seeds together.
5. In a bowl, add olive oil, followed by the chopped pieces of garlic (keep these pieces big) freshly ground cumin-mustard powder, red chilli powder, coriander powder, salt, lemon juice and mix well.
6. Add the potato to the olive oil paste and mix thoroughly. (I also added the baby tomato’s)
7. Pre-heat the oven to 350F, and place the spicy potatoes.
8. Cook for about 30-40 minutes.
9. Garnish with coriander and serve hot.
