Masala Pepper Parcels
I have lot of peppers and I need to use them up....first thing that comes to mind is Stuffed peppers. But I have never been a fan of stuffed peppers only because of the complexity in eating it and making a big mess.
So to have something more easy and minimal mess masala pepper parcels was the solution to using my peppers.
Ingredients:
For stuffing:
1 Onions
1 Carrot
1/2 cup green peas
Red chilli powder
Corriander powder
Garam masala
Lemon Juice
Green chilli paste
Ginger paste
For the base:
Pepper (capsicum) - You can use green, red, yellow or orange
For garnish:
Bread crumbs
Cheese (used amul in this case, you can use mozarella)
For this recipe I used red peppers, since red pepper has a little sweet flavor having the stuffing little spicy gives the perfect blend.
Method:
1. In a pan heat oil, add finely chopped onions and saute till golden brown
2. Crush carrots and green peas in a chopper making it a paste form
3. Add the carrot and green peas paste to the onions and cook.
4. Add red chilli powder, garam masala, corriander powder, green chilli and ginger paste followed by salt and lemon juice.
5. Once cooked the stuffing is ready.
6. Cut the pepper in long and broad slices
7. Place the masala stuffing on the pepper slices
8. Add bread crumbs followed by cheese
8. Heat the oven to 350F, add oil in a cooking tray and place the peppers.
9. Cook the peppers to about 20-30 minutes.
Serve hot.
