Shrikhand
It’s
raining sweet’s these days at home. With mom visiting us, I am having a gala
time learning mom’s secret recipes from gujarati undhyu to shrikhand.
Using
greek yoghurt this recipe for shrikhand is the simplest and tastiest one so far
at home.
Greek
yoghurt which is widely used in Mediterranean food is strained to remove the
excess of whey and sugar making it creamier. It also has more protein content
by cutting the sugar compared to regular yoghurt adding good health benefits.
You
can also prepare this recipes using regular yoghurt by straining it to remove
excess of water.
Ingredients:
1
medium container of Greek yoghurt
4-5
tsp of sugar (depends on personal sweetness level)
Cardamon
powder
Saffron
Almond
chopped
Pistachio
chopped
Method:
- Take a medium container of greek yoguhurt and beat it with a spoon.
- Add the required sugar and whisk it thoroughly to have a consistent texture.
- In a small bowl add few strands of saffron with 2 tsp of milk and heat it in the microwave for 30 seconds.
- Add the saffron to the greek yoghurt mixture
- Mix well and add cardamom powder.
- Garnish with chopped almond and pistachio.
Serve
cold.
Note:
Mango shrikhand can be made by adding freshly crushed mango and straining it to
remove the excess of liquid.
