Gujju Style Puran Poli


So last Friday while driving back from work I was craving for one of my favorite sweet dishes puran poli. Now, nothing beats the ones made by my grandmom and mom. But living away from home I decided to take the challenge to experiment it myself. The recipe listed here is a typical gujju style puran poli using toor dal and jaggery.

Ingredinets:
Toor dal – 1 cup
Jaggery – ½ cup (add more if you prefer to be more sweet)
Cardamon – ½ tsp
Ghee
Wheat flour – 4 cups
Water

Soak toor dal for about 3 hours atleast.
In the mean time, make the dough using the wheat flour, ghee and water.
Make sure the dough isn’t too soft and keep it aside for about atleast an hour.
Grind the cardamom to a fine powder.
Cut the jaggery in small pieces and keep aside.
Wash the toor dal and in a bowl add sufficient water (about twice as the dal) and cook high in the microwave for 30-40 minutes. (You could even cook in a pressure cooker).
When the dal is completely cooked remove the excess of water (if any).
In the hot cooked dal add the cardamom powder followed by jaggery.
Keep stirring it and the jaggery will start melting.
Microwave this mixture for about 1-2 minutes, remove the mixture and keep stirring. (You can cook this on the stove, just make sure it is on low flame and watched constantly).
Follow the above step until the mixture is thick in consistency.
The easy check is place the spoon in the center and if it remains stable this means it is perfect in consistency, if it falls completely the water from the mixture needs to be evaporated.
Keep the mixture open (preferably under the fan) to cool it down.

Once cooled, make small round balls of this mixture and of the dough as well.
Start making round chapatti and place the sweet miture in the center and wrap it tight and roll it round.Cook this puran poli using ghee.
When ready serve it hot with ghee.
Using ghee with puran poli makes it easy for digestion.
