Malai Baigan
Ingredients:
Small or big eggplant
Onions
Tomatos
Cashew (crushed)
Paneer(crumbled)
Sour Cream
Garam Masala
Red Chilli
Corriander powder
Turmeric powder
Fresh corriander
Lemon juice
Oil
Salt
Method:
1. Cut the eggplant in round slices
2. Heat the oil and fry the eggplant
3. In a pan add oil and saute the onions, follwed by crushed cashew and crumbled paneer.
4. Add the chopped tomatos and all the masala's, salt and lemon juice.
5. In a baking tray place the fried baigan slices and add the cooked masala on top.
6. Finally add 2 big spoon of sour cream and corriander leaves.
7. Bake this for about 20-25 min at 350F.
Serve this dish hot with paratha or naan.
