Chipotle Bowl
The name chipotle bowl might tempt you to go to "Chipotle" right now but hold on have you thought about making a chipotle bowl at home. This might sound too much of work but trust me with a little effort of getting the ingredients this is the most simplest recipe one can think of.
Ingredients:
Black beans (you can use canned if you don’t want to go through the hassle of soaking and cooking)
Mexican rice (basmati rice is also a good substitute)
Onions
Bell peppers
Corn
Tomatoes
Guacamole (you can use ready made or make at home)
Salsa (you can use ready made or make at home)
Sour cream
Mexican cheese
Tortilla chips
Method:
1. Cook black beans if you are not using canned. In either case, in a pan heat the beans add some salt and dry red chilli’s
2. Cook rice (do not cook in a pressure cooker), once the rice is cooked stir it with a fork making sure the grains are separated well.
3. Cut the onions and bell peppers in long ways. Heat oil in a pan and sauté onions and bell peppers until cooked. Add salt to taste.
4. Boil the corn and cut tomato’s in small pieces. Make a mixture of tomato’s and corn and adding salt and lemon juice.
Once you have all these ingredients ready you are ready to make your own chipotle bowl.
Place the rice in the bowl followed by black beans, onions and bell peppers and the corn-tomato mixture. Add salsa, sour cream, guacamole and Mexican cheese. Garnish with some tortilla chips.
