Malai kofta Curry
Ingredients for Kofta:
Potato
Green peas
Carrots
Cauliflower
Corriander
Garam masala
Red chilli powder
Corriander powder
Bread crumbs
Salt
Lemon juice
Ingredients for curry:
Onions
Tomatoes
Tomato paste
Ginger
Garlic
Bay leaves
Cinamon sticks
Cloves
Red chilli powder
Lemon juice
Cashew
Ingredients for dressing:
Sour Cream

Method:
For Kofta:
Boil potatoes, cauliflower, green peas and carrot.
Mash all the vegetables once boiled.
Add garam masala, red chilli powder, coriander powder, lemon juice, salt, and finely chopped coriander.
Roll to form elongated balls and dip in bread crumbs
Pan fry the kota’s till crispy.
For Curry:
Form a paste of cashews in a blender.
Blend the onions and garlic in the blender forming a paste.
In a pan, heat butter add bay leaves, cinnamon sticks and cloves.
Add the cashew paste and stir till it starts turning a little dark in color.
Add the onion-garlic paste and stir till cooked.
Add chopped tomatoes and tomato paste.
Add garam masala, red chilli, ginger (paste or grated), lemon juice and salt to taste.
Cook till the curry has a good consistency.
For serving:
In a baking dish place all the kofta’s and pour the curry over the kofta’s.
Add sour cream and bake bake at 250F to 300F for about 10-15 minutes.
Once hot grate cheese on the kofta curry and serve with hot parathas.
