Eggplant Veggie (Baigan Bharta)
By public demand, I thought of publishing some recipes (the credit of teaching goes to my mom- who most of you know is a great cook). This is definitely highly rated among most of my friends.
Baigan Bharta:
Ingredients:
1 eggplant (baigan)
1 small onion
1 small tomato
Finely grated garlic
Finely grated ginger (or ginger powder)
Finely chopped coriander
Finely chopped green chillis (I personally prefer green chilli paste as it blends well)
Red Chilli powder
Turmeric powder
Corriander powder
Garam masala powder
Oil
Salt to taste
Procedure:
1. Make cuts on the baigan with a knife or fork making sure you DON'T chop it into halves. This is for the baigan to cook from inside.
2. Brush oil all over the baigan and place the baigan on an aluminum foil.
3. Place the baigan in a pre-heated oven at 350-400F (temperature depends on the size of the baigan) for about 30-60 minutes.
4. Once the baigan is cooked in the oven peel the skin of the baigan while it hot and mash the baigan.
5. In a pan, add oil and fry garlic followed by onion and ginger and tomatoes.
6. Then add the mashed baigan and mix it well.
7. Add green chilli (or paste), corriander powder, turmeric powder, red chilli powder and garam masala and salt.
7. Adding tomato paste is optional. (it gives a good texture)
8. Garnish will coriander and serve hot.
